Vegan Brownie with Mango Glaze

Everyone loves a good brownie recipe, so what better way to enjoy them than without the guilt -- vegan style! We decided to create our delectable treat with a twist. We threw mango into the equation! Because what is life without a good mango?


This recipe yields moist and rich brownies. You will not be disappointed. Let's get right on into it!

SERVES: 8-10 people


Mango Glaze Puree Ingredients

  • 1 cup of diced mango

  • 1/2 tsp lemon juice

  • 1-2 tbsp of water (depending on your desired consistency)


Brownie Mix Ingredients

  • 2 cups of gluten free flour

  • 3/4 cup of cacao powder

  • 1/2 tsp of baking soda

  • 1/2 cup of monk fruit sweetener

  • 1/4 tsp of salt

  • 1 tsp Vanilla extract

  • 1 cup of water

  • 1/2 cup of grapeseed oil

  • 1/2 cup of chocolate chips (optional)

  • 1/4 cup of Agave (optional)

  • Rooted Vigor's special addition: 1 tbsp of Baobab powder (optional)

Step By Step


Step 1: Preheat oven to 350 F and lightly coat your skillet (or any pan) with oil.

Step 2: While the oven is preheating, prepare mango glaze. Place diced mango into the food processor and blend until even and smooth. Add lemon juice and water and continue to blend until desired consistency is reached.  Then simmer glaze in a small skillet for 2 to 3 minutes.

Step 3: Combine all brownie ingredients (add all dry ingredients first, then add the wet ) in a large bowl and whisk until mixture is even and all lumps have disappeared. (If you want extra moist brownies, add a little more oil. If you want them more cakey, add less oil)

Step 4: Pour brownie mix into greased cast iron and spread mix evenly. 

Step 5: With a spoon, place globs of mango puree in the skillet and mix lightly with a fork.

Step 6: Place skillet into the oven and bake ingredients at 350 F for 35 minutes or until knife comes out clean.

Step 7: Allow brownies to cool for 2 minutes before cutting, then spread the remainder of the glaze on top the brownie.

Step 8: Last but not least, Enjoy !!
